Hilda Baci, a Nigeria-based chef, has set a new Guinness World Record, confirmed on social media, for cooking the largest ever course of Jollof rice — a popular and symbolic West African dish made of rice boiled in a tomato-based sauce with meat — in a batch weighing 8,780 kilograms last week, the BBC reported.

The event took place in Lagos. The dish took nine hours to cook, involving 10 other professionals, with the effort briefly put at risk when the pot broke while being hoisted onto a crane to be weighed. Fortunately, the dish did not spill.

According to the media outlet, the recipe for the record-breaking batch included 4,000 kilograms of rice, 500 cartons of tomato paste, 600 kilograms of onions and 168 kilograms of goat meat. The cauldron was specifically crafted to hold 23,000 liters.

Baci is also known for winning a Jollof rice competition in 2021 and for setting a world cooking marathon record in 2023, which was later surpassed.
